Basant Panchmi Special: Kesari Kheer

Ingredients
1 and 1\2 litres full cream milk, 1\2 cup rice, 10-12 kesar strands, 4 cup sugar, 1\4 cup cashew nuts (chopped), 1\4 cup almonds (chopped), 1\4 cup pistachios , 1 tsp cardamom powder
How to make
First wash rice and soak them for at least an hour. Now, take 2 tbsp of milk and soak kesar strands for 30 minutes. Now pour milk in a heavy bottom pan and start heating it. Bring it to boil. Slowly, add kesar strands soaked in milk and rice to the boiling milk. Now reduce the flame and slowly cook the milk and rice for about an hour. Keep stirring till the kheer turns creamy and the rice is cooked. Add sugar, cardamom powder, cashew nuts, almonds and pistachios and cook for 6-8 minutes. Lip-smacking Kesari Kheer is ready to serve. Garnish with almond and pistachio.
