Balushahi recipe

Balushahi is a traditional dessert in northern Indian Cuisine. North Indian sweets also known as Balushahi or Badhusha.
Ingredients
500
gram maida, 200 gram melted ghee, 1/2 cup Curds, 1/2 tsp soda bicarb,
1/4 tsp cardamom powder, ghee for frying, 3 cups sugar, 1 1/2 cup
water, 1/2 tsp lemon juice.
How to make
Mix maida and
soda bi carb and sieve it. Add cardamom powder. Now add ghee and melted
ghee and mix thoroughly. Knead soft dough using lukewarm water and keep
aside for 30 minutes. Make small lemon size rounds balls.
Press
to flatten a bit, and press in the center with thumb to make balushahi
shape. Heat ghee in wok, put some balusahai and fry on medium flame till
golden brown. Invert carefully and fry other side similarly.
Fry
all balushahi as method and keep aside. For sugar syrup add 1 1/2 cup
water with 3 cup sugar and boil till it prepare syrup of 1 thread
consistancy. Â
Now put fries balushahi in the syrup and, allow
to soak for 5 minutes. Remove from the syrup and and keep on a plate to
drain excess syrup. Cool it completely, before transferring to air tight
container.
