●    1 teaspoon turmeric powder
●    1 teaspoon red chili powder
●    1 teaspoon garam masala
●    1 teaspoon coriander powder
●    Fresh coriander leaves (for garnishing)
●    2 tablespoons mustard oil (or any cooking oil)
●    Salt to taste

Step-by-Step Recipe:

1. Roasting the Eggplant:
The key to a perfect Baigan Ka Bharta lies in the smoky flavor, achieved by roasting the eggplant directly on a flame. Wash the eggplants thoroughly, make a few slits, and brush them with oil. Roast them over an open flame until the skin is charred and the eggplant becomes soft inside. Once done, let them cool for a few minutes. Peel off the charred skin and mash the eggplant pulp thoroughly. Set it aside.

2. Prepare the Masala:
In a pan, heat mustard oil until it starts to smoke lightly. Add cumin seeds and allow them to crackle. Next, add the finely chopped onions and sauté until golden brown. Add the ginger-garlic paste and green chilies, sautéing for a couple of minutes until the raw smell disappears.

3. Add the Tomatoes and Spices:
Now, toss in the chopped tomatoes and cook until they turn soft and mushy. Add turmeric, red chili powder, coriander powder, and salt. Stir well and cook the mixture until the oil starts to separate from the masala, indicating it’s well-cooked.

4. Mix in the Roasted Eggplant:
Add the mashed roasted eggplant into the cooked masala and mix everything together. Allow the eggplant to absorb the flavors by cooking it for another 5-7 minutes on medium heat. Stir occasionally to prevent sticking.
