Malpua and Rabri:-
Ingredients
For Rabri
1 tbsp maida, 1/2 tsp elaichi/cardamom powder, chopped mixed dried fruits, 100g paneer, 1 cup milk (150 ml), 1/4 tin Milkmaid sweetened condensed milk (100g)
For Malpua
1 cup water (150 ml), 1 pinch baking powder, 50 gm paneer, ghee for shallow frying, 100g sooji/semolina, 1/2 tin Milkmaid sweetened condensed milk (200g)
For sugar syrup
1 to 1 and 1/2 cups sugar, 2 cups water (300 ml)
How to make
Rabri
Crumble paneer. Now make a paste of maida by adding 3 to 4 tbsp milk. Now combine milkmaid sweetened condensed milk with rest of milk. Boil this mixture. Now, add maida paste to milk. Stir the milk continuously. Cook this on low flames for 5 minutes. Add chopped nuts, paneer and elaichi powder. Remove it from fire. Cool and refrigerate.
Malpua
Now prepare sugar syrup for dip by boiling water and sugar till it get slightly thick. In a bowl take milkmaid sweetened condensed milk, sooji, maida, water and baking powder. Mix all the ingredients well and leave for 10-15 mins. Crumble paneer till it get smooth. Add this paneer to the above mixture. Beat well.
For shallow frying, heat ghee in a flat frying pan. Now, make small flat malpuas by pouring batter with small ladle in hot ghee. Fry till both sides get evenly browned.
Remove the malpuas from ghee and soak in syrup for 20-30 seconds. Remove them from syrup. Arrange malpuas on plate. Top them with rabri and nuts. Serve hot.
