Peanut and Coconut Modak...
This one is made by mixing roasted peanuts with grated fresh coconut and jaggery for the occasion.
Ingredients
1 cup rice flour, 1/2 cup peanuts, 1/2 cup grated fresh coconut, 1/2 cup powdered jaggery, 1/2 tsp cardamom powder, 1 - 2 tsp ghee, a big pinch of salt
How to make
Heat a heavy bottomed pan on a medium heat and roast the peanuts until it turns golden brown. Cool and rub the skins off.
Grind the roasted peanuts into a little coarse powder and set it aside. Mix the coconut and jaggery in a heavy bottomed pan and allow the jaggery to melt.
